Monday Menu (a little late) January 22, 2008

Yesterday was a busy one so I’m a bit late with this. 

So far participating in the Monday Menu has had it’s desired effect, mainly to make sure I have a plan for dinner every night AND follow through with it.  I tend to want to wimp out due to previous GF cooking failures.  It may be disgusting, but it’s easier to eat at McD’s. 😉

Monday–Skillet Skettie (since I’ve made it already I’ll post the recipe later…don’t know how much later) & Butternut Squash

Tuesday–Hot dogs & chips (we are having a movie night)

Wednesday–McD’s

Thursday–Chicken & Potatoes with spinach

Friday–Slow Cooker Steak with Rosemary Rice

Saturday–Creamy Hashbrowns with eggs (I know, no veggie.  I’m horrible.  I just can’t figure out a veggie that would even taste good with breakfast food.)

Don’t get discouraged girl! It takes time to learn how to cook well gluten free! If you need help with anything, please let me know! I’ve learned a lot of shortcuts and ways to make things easier, as many of us have… you can do it and your meal plan looks great! I’ll post it now! That steak with rosemary rice sounds awesome!!! And just to let you know… I’m a Mickey D’s fan too!

Since you are Sox fans, are you also Pats fans? Not only am I excited about the Pats in the Super Bowl, but it also shortens the time between football and baseball season. 🙂

thanks for your comment on my recipe blog. Actually, I haven’t really looked for wheat free flour tortillas, but I have tried hemp wraps, and they were ok. Different and you have to expect different, because they do NOT taste like flour tortillas! Usually now when we eat TexMex food, we go for the corn tortilla dishes.

Menu looks great. I was sick and didn’t get mine up at all. Do you roast your potatoes? Roasted potatoes with rosemary are my absolute favorite.
